Steps
Sequence Step
1Heat the oil for about 30 seconds in a saucepan or stockpot. Add the shallot; saute until it is soft, but not brown. Add the garlic and saute for another 30 seconds. Add the tomatoes and carrots; stir briefly.
2Dilute the tomato paste in the broth, and add the broth and basil. Bring to a boil, then simmer for 25 minutes.
3Remove from heat, put in blender and blend just until creamy (Don%u2019t overblend, as this will create air bubbles). Return to pot and stir in soy milk, salt and pepper. Taste for sweetness. Add the honey if you desire. Adjust the salt and pepper if needed. Stir and re-heat for another 3-5 minutes. Serve.
