Recipe Description We developed this recipe for my diabetic father who loves mashed potatoes, and my family refuses to eat regular potatoes anymore, I am so happy.

Steps
Sequence Step
1chop all the veggies and add to broth and garlic
2lightly boil, covered for about 45 mins, until veggies are soft
3drain extra liquid
4using a hand masher, start mashing, as you slowly pour buttermilk and parmesan cheese. add pepper to taste and enjoy!! No gravy needed
