Steps

1Chop potatoes into ½ inch dice (this is a small dice so the potatoes will cook faster)
2Heat Skillet over medium heat, add vegetable oil to coat bottom of pan generously
3Add diced potatoes and cook covered for about 8-10 minutes, stirring twice, until potatoes are almost cooked through
4While potatoes are cooking chop 2 sausage links, by slicing them into 4 slices lengthwise then into ¼ inch chunks by cutting across the slices
5When potatoes are almost cooked through add onions and sausage, season generously with salt and pepper, and continue cooking, uncovered about 5 minutes until onions are translucent
6Add chopped greens and garlic, stir, and cook covered about 5 more minutes, stirring each minute until greens are wilted but still bright green
7(Optionally, you can cook the greens in a separate skillet/pan with seasoning and serve as a side)
8Season to taste with salt
