| 1 | Place 1/2 tbsp of butter in skillet until melted. Add onions and mushrooms and sauté until onion is translucent. | 2 | Add 1/2 tbsp vinegar and mix well. Season with salt. Keep warm. | 3 | Prepare buttered whole wheat toast or English muffins. | 4 | Spray each side of microwave egg cooker with butter flavored cooking spray. Place 1/4 tsp of vinegar in each side. Add 1/4 cup of egg beaters to each side. Cover and microwave per cooker instructions. | 5 | Add spinach to vegetables and sauté until slightly wilted. Plate the vegetables and cover with the egg.
