Steps
Sequence Step
1combine sugar, flour whole wheat flour, cinnamon, baking soda and salt together
2then add the following ingredients coconut, craisins, carrots, apples and pecans....Toss after adding each ingreadient.
3Then mix eggs, oil, applesauce and vanilla together and then add to dry ingredients. Stir until combined. DO NOT OVERWORK the batter, it will be very thick. Line muffin pans with paper muffin cups. This recipe makes 36 muffins depending on the size of the muffin Bake at 350 degrees for 25 to 35 minutes. When you smell them they are done. You can also put batter in loaf pans and make breads
