Soy Sauce and Citrus Marinated Chicken

chickenwhole chicken 3 1/2 -4 pounds, halved, backbone removed
Steps
Sequence Step
1Combine garlic, ginger, juice, soy sauce, vinegar and sugar in bowl with chicken. Chill 12 hours to 2 days.
2Preheat oven to 425. Roast on foil lined rimmed baking sheet until deep brown (30-40 minutes).
3Serve with Soy Sauce and Citrus Marinated Chicken Dipping Sauce.

Ingredients

cupchile, hot, green or red, chopped (1 whole fresno)

tablespoonsfish sauce

tablespoonsLime juice, raw - or 1 TBSP

tablespoonscilantro, fresh, chopped

fruit (3-3/4\" dia)Pomelo
Steps
Sequence Step
1Bruise lemongrass by rolling with rolling pin.
2Bring lemongrass and 1/2 cup water to boil. Remove from heat and sit for 10 minutes. Strain into large glass.
3Heat a large skillet over medium high heat. Toast shallots, scallions, chile, and garlic for 8-10 minutes. Remove skins from garlic and coarse chop ingredients.
4add garlic, shallots, scallions, chile, and ginger to lemongrass infusion. Stir in fish sauce, lime juice, and sugar.
5Remove peel and pith from Pomelo. Cut along membranes to release segments. Squeeze juice from membranes into bowl and discard. Tear segments into large pieces and mix into sauce.
6Serve over Soy Sauce and Citrus Marinated Chicken and top with Cilantro.
