Sequence Step
1IN SMALL SAUCE PAN COMBINE MILK, SUGAR, SALT AND BUTTER. HEAT ON LOW FLAME UNTIL BUTTER MELTS. DO NOT BOIL!. COOL UNTIL LUKEWARM (105-115 F.)
2WHISK YEAST INTO WARM MILK MIXTURE. LET REST 5 MINUTES.
3WITH PADDLE ATTACHMENT, COMBINE MILK MIXTURE AND 12 CUPS FLOUR. MIX ON LOW SPEED 1 MINUTE OR UNTIL SMOOTH. WITH MIXER RUNNING, ADD IN REMAINING FLOUR 1 CUP AT A TIME UNTIL SMOOTH ELASTIC DOUGH FORMS. (DOUGH WILL BE SLIGHTLY STICKY TO THE TOUCH.) COVER WITH PLASTIC WRAP AND PRROF ON BAKERY SETTING OF RATIONALE OVEN FOR 30-40 MINUTES OR UNTIL DOUBLED IN SIZE. PREP MUFFIN PAN WITH NON-STICK COOKING SPRAY. PUNCH DOUGH DOWN IN CENTER AND FOLD OVER EDGES A FEW TIMES. FLATTEN OR ROLL DOUGH ON LIGHTLY FLOURED TABLE TOP 1 INCH THICKNESS. CUT 1 INCH ROWS BOTH WAYS TO GET A 1 INCH SQUARE. PINCH CORNERS UNDER TO FORM BALL, PLACE 3 BALLS PER MUFFIN CUP. UNCOVERED, PLACE MUFFIN PANS IN RATIONALE OVEN AND BAKERY PROOF FOR 15 MINUTES OR UNTIL DOUBLE IN SIZE. BAKE 12 MINUTES IN 325 F. OVEN OR UNTIL LIGHTLY BROWNED. ROTATE PANS AFTER 6 MINUTES.
4BRUSH LIGHTLY WITH MELTED BUTTER AND SPRINKLE A DASH OF SALT ON EACH ROLL. REMOVE IMMEDIATELY AND STORE LOOSLEY COVERED UNTIL SERVICE.
