Recipe Description This is a basic potato soup. It's essentially mashed potatoes with extra milk but my husband (who generally doesn't care for soup) loves it.

large (3" to 4-1/4" dia.)potato, peeled and diced

quarts2% milk or skim
Steps
Sequence Step
1Add diced potatoes, a tablespoon or so of butter and a dash of salt to a pot and cover them with water. Boil them until very tender (usually about 20 to 25 minutes).
2Drain the potatoes. Mash them to the consistency you wish. It''s okay if it''s lumpy.
3Stir in the rest of the butter and add salt to taste.
4Pour in the milk (use enough to make it a soup, it''ll thicken as you stir so add it as needed).
5Heat through. Add any more salt and pepper to taste.
6Serve with shredded cheese on top if desired.
