PLACE THAT PAN INTO A 4" LINE PAN WITH 1" OF WATER IN IT. COVER THE PAN WITH PLASTIC WRAP OR ALUMINUM FOIL. HEAT IN CONVECTION AT LOW TEMPERATURE. NOTE: THE INTENT IS JUST TO WARM THESE TORTILLA SO THEY ARE PLIABLE NOT RE-COOK THEM. 3. TO SERVE THE BREAKFAST BURRITOS: A. THE BREAKFAST BURRITO MIX AND TORTILLA SHOULD BE PLACED ON THE SERVING LINE BY THE THE OTHER EGG PRODUCTS. IN A 4" HALF PAN MIX 6 EACH GRAY SCOOPS (4oz EA) AND 3/4 OF A PAN OF BREAKFAST SCRAMBLE MIXTURE. PLACE TORTILLA(S)ON TO PLATE OR LARGE COMPARTMENT OF SERVING TRAY. PLACE 1 SPOONFUL (3oz)OF MIXTURE ON EACH TORTILLA. B. THE CUSTOMER MAY THEN BUILD THEIR OWN BREAKFAST BURRITO FROM THE OTHER INGREDIENTS ON THE SALAD BAR: CHEESE,SALSA , ETC... NOTE 1: SERVINGS SIZE IS EITHER: 2 BURRITOS OR 1 BURRITO AND 1 OTHER EGG PRODUCT. CUSTOMER MAY SELECT NORMAL MEAT CHOICES. I.E. - SAUSAGE, HAM, ETC...
