| 1 | Marinade: soy sauce, sherry, brown sugar, cornstarch and ginger. Add meat and marinate for 15-30min. | 2 | Heat oil in wok or heavy skillet over high heat. add snow peas. cook until peas get bright green. 1min. remove and set aside. | 3 | In hot wok; add half beef and cook. Add half of chopped scallions. remove once cooked. set aside. | 4 | In hot wok. add remaining beef. add remaining chopped scallions. add left over marinade. cook. | 5 | Once second batch of meat is cooked. Add first half of cooked beef and snow peas. Cook together for 45min. Turn off heat. Mixture thickens as it sits.
