| 1 | Beat softened butter with brown sugar for at least 5 min, to incorporate air into the mix. Add baking soda to mashed bananas and let sit for at least 2 min. The soda will react to the acid in the banana and give the cookies their rise. Add eggs to butter/sugar, then vanilla, cinnamon, applesauce and banana. Slowly add in flour until combined. Drop onto cookie sheet and cook 8-10 min. til golden |
