Steps
Sequence Step
1Boil potatoes for 20 to 25 minutes or until soft. CCP-- Minimum internal temperature should be 140 degrees F. or above. Drain well.
2Heat a sauce pan over high heat. Add oil.
3add onion. Saute until softened.
4Add garlic. Saute until aroma is evident.
5Stir in milk. Bring to simmer. Reduce heat to low and simmer for 3 to 4 minutes.
6Place potatoes in a mixer bowl with whip attachment. Mix on low speed for 1 minute to break up potatoes.
7Add milk mixture, sour cream, margarine, salt, pepper and dill. Whip on medium speed until well-blended. Do not over mix. CCP-- Hold hot (140 degrees F. or above) for service or cool quickly (per HACCP) to internal temperature of 40 degrees F. or below for use within 24 hours.
