1	tablespoon	olive oil, extra virgin
3/4	pound, raw	chicken breast halves, boneless, skinless
1/2	dash	salt
1/2	dash	black pepper
1 2/3	large (3" to 4-1/4" dia.)	potatoes
1/4	large	Onion, chopped
1/4	tablespoon	thyme fresh
1/4	cup, sections	lemon, cut into wedges
2 1/8	tablespoons	honey
1/8	cup	chicken broth, low sodium, canned
1 1/2	clove	garlic minced

Steps

1	Season Chicken with salt and pepper. Brown both sides of Chicken in a skillet w/ EVOO over medium high heat.
2	Put potatoes, onion,garlic, thyme, and lemon slices on bottom of slow cooker. Season with salt and pepper. Place chicken on top and drizzle with honey. Add stock and cover.
3	Cook, undisturbed for 4 hours on High or 6-8 hours on low.
4	If desired, top each portion with lemon zest, flat leaf parsley, toasted ine nuts and balsamic drizzle
