| 1 | Combine the oats, dates, ground cashews, and cocoa powder in a small mixing bowl. Set aside. | 2 | In a glass bowl, microwave the chocolate chips. I microwave in 30 sec. intervals, removing bowl from microwave and stirring at each interval. When the chips are “mostly” melted, I remove the bowl and add the Maple Sugar and mix. Next, add the Silk and mix. I returned the bowl to the microwave for about 10 sec. to reheat before adding the oat mixture. | 3 | Using a wooden spoon, mix the oat mixture into the melted chocolate, stirring until well combined. Remove the baking sheet from the freezer and, using a melon baller, drop the mixture onto the parchment until all of the mixture is used. Place the sheet in the refrigerator until cookies are set, about 1-2 hours. Serve cold or at room temperature. |
