Steps
Sequence Step
1Preheat the oven to 350. Spray a 12 cup muffin tin with cooking spray or line with paper liners.
2Place flour, baking soda, spices and raisins in a medium-size mixing bowl and stir lightly. Set aside
3Finely chop carrots with Vitamix or Food Processor
4Add eggs, sugar and olive oil to the carrots and mix until thick and creamy.
5Pour carrot mixture into flour mixture and fold to combine. Spoon the mixture into the prepared muffin tin.
6Bake for 20 to 25 minutes until golden brown. Transfer to wire rack to cool, then serve.
