| 1 | Place a large (ideally 10-inch) heavy skillet over medium heat. Add the oats and nuts and cook, stirring, for 10 to 15 minutes, or until they smell and look toasty. | 2 | Add the oat bran, sunflower seeds, sesame seeds, and pumpkin seeds, as well as the coconut, if desired. Keep cooking, stirring frequently, for another 10 minutes or so. | 3 | Sprinkle in the brown sugar and salt. Continue to cook and stir for about 3 more minutes, or until the sugar melts slightly. Remove from heat. | 4 | Cool to room temperature. May add dried fruit (up to 1 cup) or wheat germ (up to 1/2 cup) if desired. Transfer to a clean glass jar with a tight-fitting lid. To keep fresh longer, store in freezer. |
