Steps
Sequence Step
1Heat water, butter, salt and honey to 125 degrees
2Combine 1 cup wheat flour and 1/2 cup regular flour with yeast in bowl.
3Add liquid to flour.
4Mix at low speed with wire whisk attachment for 30 seconds.
5Scrape mixture from sides into the bowl.
6Mix at highest speed for 3 minutes with wire whisk attachment.
7Replace wire whisk attachment with dough hook.
8Slowly add remaining wheat flour while mixing at low speed.
9Mix until dough forms into elastic ball.
10Butter a smooth-surfaced mixing bowl.
11Form dough into smooth ball and roll around in buttered bowl.
12Cover bowl with cloth and proof for 90 minutes at about 90 degrees.
13Punch dough down and place it on a smooth, lightly-floured surface.
14Roll dough flat with rolling pin.
15Form dough into loaf shape by folding it and then rolling it up. Make sure any seams are on the bottom.
16Butter a loaf pan.
17Place dough into loaf pan. Place loaf pan into covered roasting pan or another container that allows several inches of clearance for dough to rise.
18Proof dough for 45 minutes.
19Bake at 375 degrees for 20 minutes.
20Place sheet of tinfoil on top of loaf to prevent burning. Continue baking for 15 minutes.
