1Preheat your oven to 350. Line two baking sheets with a silpat or parchment paper. No mixer needed! In a medium bowl, whisk together flour, baking powder and soda, salt, and cinnamon. In a large bowl, melt your butter for a few seconds in the microwave. Then, whisk in your brown sugar and white sugar. Combine well. Add the egg white to the mixture, then stir in the applesauce and vanilla. Then, carefully stir in the flour mixture, oatmeal until just combined. Fold in the chocolate chips. Use a small cookie scoop or tablespoon to drop balls of cookie dough onto your baking sheets. Bake for approximately 10 minutes, until cookies are light brown around the edges. Let them rest on the baking sheets for a few minutes before removing from the sheet. Transfer cookies to a wire rack to cool completely.
