| 1 | Saute chopped onion in butter until softened but not translucent. Drain some of the liquid from the Rotel tomatoes. Add to skillet with onions. Add garlic, spices, cilantro, and tomato paste. Cook until thickened and most of the liquid has evaporated. Add cooked rice. Stir and cook another 10 minutes or so until the flavors have combined. Serve. |
