1 | In large mixing bowl, whisk together dry ingredients. |
2 | Separate eggs, adding yolks to dry ingredients and whites in small mixing bowl. |
3 | Beat whites until moderately stiff, set aside.
Note: Better if whites are at room temperature before whipping. |
4 | Add milk and melted butter to dry ingredients and blend well with wire whisk. |
5 | Add vanilla and blend well. May be necessary to add few tablespoons of additional milk until correct consistency is achieved. |
6 | Carefully fold egg whites in mixture. |
7 | Ladle mixture into hot waffle iron and bake. |
