Sequence Step
1Slice Zucchini on a mandolin. You can either slice them short ways or long ways...I prefer short ways.
2Brown Turkey meat. While it''s cooking add in fennel seeds. This will give it a flavor like Italian sausage
3I like to put my zucchini in a microwave safe bowl and microwave it for a few minutes and drain off any water. Zucchini is very watery as it cooks and this helps it to not be too watery when it''s done
4Take butternut squash (I buy mine already cubed up at Costco and have used it straight from the package or added some leftover squash from my fridge that had been cooked) and place in a food processor with the marinara sauce and process. (This is my sneaky way of adding more veggies into my meals without the kids knowing. You can omit this step if you want to.)
5Put the zucchini, turkey meat, cheese and sauce into a casserole dish and bake covered for 35-45 minutes.
