1 | Grind Wheatberries |
2 | Mix half of whole wheat flour (approx. 6 cups of ground wheatberries) with water and yeast. Cover and rest for 30 mins. |
3 | Add in remaining ingredients except flour. Mix. |
4 | Add in remaining flour until dough is desired consistancy. Should be slightly tacky. |
5 | Knead until gluten has developed. Approx. 12-15min in stand mixer. |
6 | Divide into 4 parts. Each quarter makes a 4"x8" loaf or (2) 10"-12" pizza crusts. |
7 | For bread: form dough into loaf. Place into greased bread pan and allow to rise 30-60 min. until at least 1" above top edge of pan. |
8 | Place in cold oven and bake at 350 degrees for 35 min. |
9 | Remove from pan and cool on rack. |
10 | For Pizza: allow dough to rise in greased covered bowl for 30-60 min until double in size. |
11 | Place pizza stone in oven and preheat to 350 degrees. |
12 | Divide dough in half. Roll each to desired size. Fold edges if desired. Bake on stone for 6 min. |
13 | Flip pizza crust on stone. Add toppings. Bake until desired doneness approx. 12-18 min. |
