Steps

1Preheat oven to 375. Brush or spray 4 cups in a muffin tin with coconut oil.
2In a large bowl, mix the Italian seasoning, salt, and pepper into the turkey and divide into 4 equal portions.
3Lay a large piece of plastic wrap on your work surface. Place 1 meat portion in the middle. Press the meat into a circle about ½'''' thick.
4Place 1 egg in the center, then lift the egg and meat using the plastic wrap and shape the meat into a ball around the egg, making sure the egg is completely enclosed. Remove the plastic wrap and place the egg into a prepared muffin cup. Repeat with the remaining 3 eggs.
5Bake for 25 to 30 minutes. Cool for 5 minutes before serving. Serve warm or cold.
