Steps
Sequence Step
1In a medium bowl, whisk together flour, sugar, baking powder, garlic powder, and salt.
2In a second medium bowl, whisk together the soy milk, vanilla, and coconut oil (don’t fret if coconut oil clumps. It will melt again when cooking).
3Add soy milk mixture to the flour mixture and gently fold until just combined.
4Heat a nonstick griddle or skillet over medium-low heat. Add 1 teaspoon of vegetable oil to the pan and pour in ¼-cups mounds of batter. Cook until the pancakes begin to bubble and are golden brown, 4 to 5 minutes. Repeat until there is no more batter.
