Sequence Step
1Use either one 9 x 13 sheet pan or 3 round cake pans. Grease and flour them appropriately, then set aside. Heat your oven to 350 degrees.
2Mix together the first eight ingredients, making certain they are blended well. Then mix in the eggs, vegetable oil, orange juice, vanilla and lemon.
3Pour the batter into the prepared pans and bake them for 30-40 minutes, or until a toothpick inserted into the middle of each cake comes out clean. Let the cake sit for five minutes on a wire rack.
4While the cake is cooling, prepare the glaze by mixing the lime juice and the superfine sugar. Using a fork, puncture holes in the top of the cake, then pour the flaze over the top. The holes will allow the glaze to sink into the cake, making it even more decadent.
5You can add cream cheese icing if you like, but this key lime cake is perfect without anything more than the glaze that will soak into it. Cut in carefully --key lime cake is very moist.--and serve it alongside real whipped cream and a tall glass of your favorite citrus drink.
