| 1 | Separate zucchini, green onion and feta into individual cupcake rounds | 2 | Beat eggs, 2 TBS water, salt and pepper | 3 | Pour egg mixture into each tin. | 4 | Cook in preheated oven on 350 degrees for 35 minutes or until eggs are set and no longer runny. | 5 | Remove from oven, allow pan to cool. Divide into 6 servings of 2 muffins each. Freeze or enjoy right away. |
