| 1 onion chopped,1quart chicken broth, 2 large zucchini seeds removed and cubed, 1/2 cup butter,tops from 2 bunches celery, 1/4 teaspoon thyme, 1 1/2 cups half and half, 1-2 teaspoons salt,dash of cayenne pepper, 4 bay leaves. | |

| 1 | saute onion in butter, add broth, squash, celery, bay leaves,thyme, parsley. Simmer 15-20 minutes until squash is tender. Remove bay leaves, place in blender or use a hand held blender until smooth. Place back in pot. Stir in half and half, salt and cayenne pepper. heat then serve. Freezes well |
