| 1 | Whisk eggs and milk with salt and pepper to taste | 2 | Spray omelet pan with cooking spray. | 3 | Saute onions until just soft. | 4 | Add mushrooms to pan and suate to desired doneness. | 5 | Pour egg/milk mixture into pan. Allow to cook until edges look dry. | 6 | While egg mixture is cooking, sprinkle shredded cheese over center. | 7 | Flip, if you can - or scramble it up. |
