| 1 | Bring 1/2 cup ample syrup and water to the boiling point in a saucepan. | 2 | Remove from heat and stir in brown sugar until completely dissolved. | 3 | Cook, covered on high heat for 2-3 minutes or until steam washes the sugar crystals from the side of the pan. | 4 | Cook uncovered until temp reaches 300-310 degrees on a candy thermometer, hard-crack stage, stirring constantly. | 5 | Stir in the butter, additional maple syrup extract or flavoring, walnuts, and baking soda. | 6 | Spread into a thin layer on a buttered baking sheet and cool completely. Break into pieces and serve. |
