Recipe Description I came across this recipe while reorganizing my personal cookbook. It's a recipe written out by hand for me by the late Lisabeth Daily Crawford. Regular Soy Sauce may be used in place of Tamari Sauce, if necessary. Adding 1 teaspoon of Kelp to the Dressing is optional. The closest I came to finding kelp in the store was a box of Nori usually used for making sushi rolls. I didn't find purchasing it worth the expense.

CARROT SALAD
Ingredients

cupfresh parsley, chopped

cupseasoned bread crumbs or whole wheat seasoned bread crumbs

cup, shreddedCheese, cheddar, Mild (preferred)or Sharp

cupsunflower seed kernels, raw

cup, packedraisins, seedless

cup, gratedCarrots, finely grated
Steps
Sequence Step
1Toss all Carrot Salad dry ingredients together until thoroughly mixed.
2Set aside and make Carrot Salad Dressing.




DRESSING
Ingredients

cupsafflower oil

tablespoonhoney

tablespoonslemon juice

teaspoonsbasil, dried or fresh, finely chopped

Steps
Sequence Step
1Combine all Dressing ingredients together and stir until thoroughly mixed.
2Pour over the Carrot Salad dry ingredients. Toss until thoroughly mixed.
3Refrigerate until ready to serve.
