cupSpinach, raw

teaspoongarlic powder

dashred peppers (hot), crushed
Steps
Sequence Step
1While heating up pan with the oil, whisk eggs together in a bowl, mince garlic (or use already minced garlic in water) and thinly slice potato.
2Chop up onion and lightly saute in oil until the onion is a light white (trnaslucent.) Put in garlic, saute for 1 minute.
3Add potato in an even layer in pan. Flip until light brown.
4Add spinach and put top on pan to help steam/wilt spinach. Once wilted, add crushed red pepper and garlic powder.
5Add eggs and stir gently to get the eggs to cook thoroughly abd to help them be light and fluffy. Put top back on to help cook.
6Once edges are starting to pull away in the pan, put under broiler for 2 minutes until top is light brown.
7Cut into quarters and serve with lemon wedges. Can be served at room temp.
