Recipe Description A great way to use up garden bounty from you zucchini plants. Very much like potato pancakes with just enough batter to hold the shreads together.

cupBread crumbs, dry

Steps
Sequence Step
1Mix all ingridients together in a bowl. Preheat griddle or frying pan and coat with cooking spray. You need to recoat the pan after each batch.
2Preheat oven to 200 degrees
3ladel batter onto heated griddle by 1/3 cupfuls and flatten slightly with a spatula.
4cook pancakes 4 minutes on each side being careful not to burn them.
5Place cooked pancakes in preheated oven to keep warm and repeat steps 3 and 4 until all of the batter is used up.
