can (15 oz)coconut milk, canned, full fat
Steps
Sequence Step
1Dice the onion, mince the garlic and the ginger. Thinly slice the red pepper into julienne strips.
2Heat 1/3 of the coconut oil in a skillet and add the onion. Saute for 2-5 minutes until golden.
3Add the garlic and ginger, stir to coat everything with the oil. Lower the heat and add the curry powder, the curry paste and coriander. Stir for 2-3 minutes or until lightly toasted.
4Add the remaining coconut oil and stir in the red bell pepper. Cook for 2-3 minutes. Add the chicken pieces. Add salt and pepper. Cook stirring often, until the chicken is golden in colour.
5Pour in the coconut milk, lime juice and brown sugar. Stir until the chicken is cooked through and the curry is slightly thickened. If it’s too dry, add a few drops of coconut milk or water.
6While the curry is cooking, cook the rice according to the packet instructions. Top with chopped coriander."
