1 | Preheat the oven to 350°F. Lightly grease a 13x9 inch pyrex dish and line it with a parchment paper sling. |
2 | In a large bowl, combine the sugars, butter, shortening, salt, vanilla, vinegar, and baking soda, beating until smooth and creamy. |
3 | Beat in the egg, again beating until smooth. Scrape the bottom and sides of the bowl with a spatula to make sure everything is thoroughly combined. |
4 | Mix in the flour, then the chips. |
5 | Use a spoon or rubber spatula to press the cookie dough into the prepared pan. |
6 | Bake the cookies for 20-25 minutes, until the edges are chestnut brown and the top is light golden brown. |
7 | Label a cooling rack with your period and kitchen and place a large plastic container with the cooling rack so your cookies can be packaged. |
8 | Remove the pan cookies from the oven, and cool in the pan prior to cutting. |
9 | Store cookies, well wrapped, at room temperature for up to 5 days; freeze for longer storage. |
