Steps
Sequence Step
1preheat oven to 375F
2mix flours, salt, baking powder, and seasonings in a small bowl.
3cream earth balance and sugar in a large bowl. Beat in egg.
4Add dry ingredients into large bowl and mix until it forms a dough. Shape into balls smaller than a walnut. Place on an a cookie tray lined with parchment paper 2 inches apart and flatten with a moist fork or finger tips.
5Bake 6 - 10 minutes or until edges are slightly browned. Makes 4 dozen 1.5 inch cookies.
6Alternatives: Can make as vanilla wafers by using 2 tsp vanilla powder. Chocolate add 1/3 cup cocoa powder Snickerdoodle by adding 2 tsp vanilla and 1 tbsp cinnamon
7Can use all purpose gluten free flour in place of garbanzo bean flour. Can use either roasted white corn flour or white corn flour, roasted is especially good with the cardamom and lemon zest.
