| 1 | Preheat oven to 350 degrees F. Spray 12-muffin tin with cooking spray. | 2 | Blend together apple sauce and brown sugar. | 3 | Beat in bananas, egg and egg white. | 4 | In a separate bowl, whisk together flour, baking powder, cinnamon and salt. | 5 | Gently stir half the flour mixture into the banana mixture, then the buttermilk, and then the rest of the flour mixture. | 6 | Divide the batter into the muffin cups, about 1/3 c for each.
