Steps
Sequence Step
1Preheat oven to 350 degrees F. Spray 12-muffin tin with cooking spray.
2Blend together apple sauce and brown sugar.
3Beat in bananas, egg and egg white.
4In a separate bowl, whisk together flour, baking powder, cinnamon and salt.
5Gently stir half the flour mixture into the banana mixture, then the buttermilk, and then the rest of the flour mixture.
6Divide the batter into the muffin cups, about 1/3 c for each. Bake until a toothpick inserted into center comes out clean and the tops are golden brown, about 20 min.
