cupsquinoa, organic, rinsed well and cooked

cups gratedCarrots (grated or puree)

large (7-1/4" to 8-1/2" long)Carrots, raw

medium (2-3/4" dia) (approx 3 per lb)apples, peeled, cored and diced

lemon yieldslemon juice
4
sprigsparsley, chopped
1/2
cupcurrants

tablespoonsolive oil, extra virgin
1/2
teaspoonsalt, to taste
1/2
teaspoonpepper, to taste

oz (24 whole kernels)almonds, toasted

ouncesCheese, parmesan, shredded

11. Gather all the ingredients and equipment
22. On the stove, bring carrot juice to a boil and add the quinoa, reduce heat and simmer until quinoa is done (15-20) minutes
33. While quinoa is cooling, hydrate the dried currants or cherries in warm water
44. Once done, cool quinoa in refrigerator for about 1 hour
55. Add remaining ingredients and toss
66. Garnish with toasted almonds and cheese
