Homemade Simple Pancake Mix
Ingredients

cupsflour unbleached, whole wheat, all-purpose

teaspoonsbaking powder (3 Tbs)

teaspoonsbaking soda

teaspoonsea salt (or table salt)

tablespoonssugar - Organic cane juice crystals (2Tbs and 2 tsp)
Steps
Sequence Step
1Sift flour into large mixing bowl.
2Add remaining dry ingredients.
3Mix thoroughly with wire wisk or pastry cutter.
4Move mix to air-tight container. Label container with date prepared. Mix is best when used within 4 months.




Pancake Batter

tablespoonolive oil, extra virgin
Steps
Sequence Step
1Pre-heat griddle or skillet to medium/medium high heat.
2Combine all liquid ingredients in small/medium mixing bowl, stir well. Add liquid ingredients to dry ingredients in large mixing bowl and stir well with wire wisk or electric mixer.
3Spray pre-heated cooking surface with canola or olive oil cooking spray.
4Add batter to heated cooking surface, 2 Tbs per pancake. Allow to cook until bubbles form in the center of the batter, then flip pancake. Continue cooking to desired taste/texture.
