Steps
Sequence Step
1place the sweet potatoes in the water along with the salt and cook for 10 min or until crisp-tender.
2Drain the liquid reserving 1 1/2 cups.
3Combine the 3 tbsp flour 1-1/2 cups sugar salt and spices and stir to mix.
4Sir the peanut butter into the warm potatoes and transfer into a 13" x 9" baking dish.
5Sprinkle the flour, sugar and spice mix over the potato/peanut butter mixture.
6Dot the surface with dots of butter or margarine and set aside.
7For the pastry: Place the 2 ups of flour and salt and 4 tsps sugar in the bpl of a food processor. Pulse for 5 seconds.
8Pulse in the shortening until mixture resembles coarse grain.
9Add water a tbsp at a time and pulse until dough forms a ball.
10REmove the dough ball to a floured surface and roll the pastry into a 13'' -x 9" sheet
11Place the pastry over the filling and cut slits into the surface.
12Brush the top with butter and sprinkle with sugar.
13Place in a preheated 400 degree oven and bake for 30-35 minutes or until the top is golden brown.
14Remove from oven and let stand for 20 min. Spoon into dishes and serve with fresh whipped cream and crushed peanuts if sesired
