Recipe Description Moist fat-free muffins. Kids love them! They are lightly sweet. Sugar can be increased up to 1/2 cup, but that, of course, adds calories. Use 1 cup of cooked, mashed or pureed squash. (the recipe builder didn't have the perfect selection for that)

cup, slicedYellow squash (puree)

cup (8 fl oz)water

teaspoonvanilla extract not imitation
Steps
Sequence Step
1preheat oven to 375 degrees (F)
2Spray muffin pan lightly with cooking spray
3Combine dry ingredients
4stir in squash puree, vanilla, and water.
5spoon into muffin pan
6bake in 375 degree (F) oven for 30 minutes
7remove from oven when center springs back from touch. Let sit for 5 minutes.
8Cool on a wire rack.
