large (8" to 8-7/8" long)bananas
Steps
Sequence Step
1Preheat oven to 350 degrees. In a medium bowl beat egg beaters, vanilla, and xylitol. (If substituting splenda,add with dry ingredients.) If desired, add very ripe, mashed bananas or pumpkin. Mix well and set aside.
2In a large open bowl, whisk together dry ingredients. Make a well in center and add egg mixture. Mix well. Add nuts.
3Form into 2 logs about 12-14" long. (If needed add additional flour to make easier to work with.)Place on cookie sheet sprayed with Pam or with baking liner. Bake 20-25 minutes at 350 or until lightly browned.
4Cool on pan for 15 minutes.Slice diagonally into pieces and place back on cookie sheet and bake for 10-20 minutes at 300.The time will depend on how soft or crunchy you like biscotti.
