Sequence Step
1Heat 1/2 tablespoon of oil in a large skillet over medium heat. Add garlic and onion, cook, stirring occasionally for 1 minute. Add spinach, 1/8 teaspoon pepper, oregano and thyme. Cook, stirring until spinach is wilted about 2 minutes. Remove the spinach mixture to a medium size bowl and let cool completely. When cool, add cheese and egg. Gently stir to combine completely.
2Cut a slit in the pork chops, so that they can be opened. Stuff each chop with 1/2 of spinach mixture. Secure with toothpicks.
3Preheat oven to 375 degrees F. Heat remaining oil in skillet. Add chops, cook 2 minutes on each side or until browned. Place chops in a single layer baking dish, just large enough to hold them. Sprinkle with remaining pepper. Bake the chops for 15 minutes or until internal temperature is 155 degrees F. Remove the chops to a platter. Allow to stand 5 - 10 minutes in a warm place before serving.
