Recipe Description This is unique way of making salmon. I use it for romantic evenings, since the pistachio butter can be prepared up to 4 days in advance.

Pistachio-Basil Butter
Ingredients

cupNuts, pistachio nuts, dry roasted, with salt added

tablespoonsbasil, fresh

cloveGarlic

cupunsalted butter, room temperature

teaspoonLime juice, raw

11. Process pistachios, basil leaves and garlic glove in food processor or blender until finely chopped.
22. Add butter and lime juice, process until incorporated into mixture.
33. Transfer butter mixture to a small bowl. Refrigerate until well chilled. Can be prepared up to 4 days ahead.




Baked Salmon

filletssalmon, app. 3 oz., cut 1-1/2 thick

Sequence Step
1Rinse fish and pat dry with paper towels. Preheat oven to 400%uF0B0 F. Butter 9 x 13-inch baking dish.
2Place salmon in dish in a single layer. Pour white wine over the top. Season with salt and white pepper. Bake until salmon is almost opaque on top, about 10 minutes.
3Place 2 tbl. Pistachio butter atop each salmon piece. Continue baking until salmon fillets are just opaque in center about 5 minutes.
4Garnish with additional basil leaves, if desired and serve immediately.
