crust, single 9"Pie crust, standard-type, frozen, ready-to-bake, enriched

cuppumpkin puree, canned

tablespooncinnamon, ground

teaspoonground ginger

teaspoonnutmeg

cupegg beaters (equivalent of 2 eggs)

cupFat free evaporated milk
Steps
Sequence Step
1Set oven to 350 degrees
2In a mixing bowl, combine neufchatel, 1/4 cup sugar and vanilla; beat until light and fluffy.
3Beat in 1/4 cup Egg Beaters to Neufchatel mixture; spread mixture in the unbaked pastry shell.
4In separate bowl combine pumpkin, 3/4 cup sugar, salt, cinnamon, ginger and nutmeg.
5Blend in 1/2 cup Egg Beaters (slightly beaten) and evaporated milk to the pumpkin mixture.
6Pour the pumpkin mixture over the neufchatel layer gently.
7Bake, bake, bake for appx 60 min.
8Allow pie to cool thoroughly. You may even want to refrigerate it for a few hours depending on how you''d like to serve it.
