1 | position oven rack in th upper part |
2 | whisk eggs, 3 T cheese, milk, lemon zest, sat |
3 | heat olive oil in 8 inch nonstick skillet over medium heat |
4 | add asparagus |
5 | reduce heat to low, pour the egg mixture into the skillet, stirring gently to distribute the fillings evenly |
6 | cover |
7 | remove cover, scatter remaining 1 T cheese over surface |
8 | run frittata under broiler until top sets |
9 | set aside for about 5 minutes before unmolding |
10 | slip frittata out of pan onto cutting board, cut into wedges |
11 | serve warm or at room temperature |
