Steps
Sequence Step
1Preheat the oven to 350 degrees. Line a 14 cup muffin tin with paper or foil cupcake cups. In a large bowl, whisk together pumpkin puree, sugars, eggs, vanilla and evaporated milk. until well blended. Add in all dry ingredients and mix until smooth. Fill each muffin cup with approx. 1/3 of batter. Bake for 20 minutes. Cool cupcakes in pan. They will sink in the center as they cool. Chill cupcakes before serving. Top with sugar free whipped topping. Makes 14 servings
