1lightly sautee the fresh spinach/shroom/onions (shroom/onion diced, spinach ripped) in some virgin olive oil, spice to taste--salt, pepper, garlic at very least. when softened, set aside in a bowl and drain off excess liquid. clean 4 approx 1lb chicken breasts of excess fat. you''ll both want them pounded thinner, and a pocket cut in the middle. to pound or cut first is up to you. toss the breacrumbs and parmesan in a bowl with the veggies. stuff 1/4 of mixture into each breast pocket (ha.), hold together with toothpicks. lightly flour the outsides, then quick fry each of the sides (less than a minute each) in olive oil on medium heat. should be able to just pack these into an 8x8 baking dish. cover with foil and bake @ 350 until they''re coming out 160-170 degrees F--start checking after 30 minutes every 10 min or so.
