1 | Rinse shrimp under cool water and dry. |
2 | Place flour on a large plate. |
3 | Beat the egg with 2 tsp. water and pour onto another plate. |
4 | On a third plate, pour the coconut. |
5 | Heat the oil in a deep heavy pot until a thermometer reads 365 degrees. |
6 | Dredge the shrimp with the flour. |
7 | Holding the shrimp by the tail, dip the flesh into the beaten egg and then coconut. |
8 | Line a baking sheet with paper towels and put a mesh cooling rack over it. |
9 | When the oil is hot, fry one third of the shrimp at a time. they should take about two minutes. |
10 | Remove shrimp with a slotted spoon and transfer to the cooling rack. |
