| 1 | Preheat oven to 350 degrees. | 2 | Place oil and brown sugar in a bowl and mix at medium speed until creamy. | 3 | Add egg whites, lemon juice, zest and flavoring, and mix at medium speed until well blended. | 4 | Stir flour, oatmeal, baking powder, and baking soda together to blend well. | 5 | Add dry ingredients to creamy mixture while beating at medium speed. | 6 | Stir in cereal. | 7 | Drop by the tablespoonful onto cookie sheets left ungreased, or lined with aluminum foil. | 8 | Bake for 8 to 10 minutes or until cookies are lightly browned. | 9 | Remove cookies to a wire rack and cool. |
